Camilla Baresani, Chicco Cerea

To be pop with haute cuisine

How does an apparently simple and popular dish become a gastronomic icon? "Da Vittorio", the renowned restaurant on the hills of Bergamo, Italy, is the most celebrated and beloved among three Michelin star restaurants. Here, the Cerea brothers, sons of the founder Vittorio, serve their exquisite and refined dishes, that embody the essence of the great and famous Italian cuisine. The "Paccheri alla Vittorio," introduced fifty years ago and acclaimed for its high-quality ingredients and tableside finishing, is among the most requested and copied pasta dishes on social media. Camilla Baresani, in conversation with Chicco Cerea, will explore how a culinary creation turns into a legendary recipe, tracing the success of a family that has shaped the history of Italian
